This is absolutely divine! My picture is not doing this delicious dressing justice as the picture was meant to ‘pop the green.’ Let’s just say light was not on my side, I am not a photographer and the kids just wanted to eat it rather than wait for the perfect food picture that they knew was never going to come! Rest assured it is green. I took a look in the cupboard grabbed what I had available and “voila!” I whipped it up. And much to my delight everyone in the house liked it!
It is super easy to do and took me the best part of 7 minutes to pop it all together. We had some of it left over the next day and although it was still great I did enjoy it more at room temperature. It is Paleo and Vegan friendly too!
Course: Dressing
Prep Time: 7 -10 mins
Serves: 5 people but that depends on how much dressing they like!
Ingredients (all organic!)
- 1/3 cup tahini (or creamy almond butter)
- 1 to 2 tbsp chopped coriander (or parsley if you prefer)
- 1/2 cup chopped red onion
- 1 tbsp sesame seed
- 2 tbsp coconut aminos (or you could use a wheat free tamari)
- 2 tbsp apple cider vinegar
- 2 tbsp lemon juice
- Himalayan salt and black pepper (to taste)
- 1/3 cup coconut milk
- 1/2 avocado
- 1/4 cup olive oil or avocado oil
- 1/2 capful of All Natural Liquid Magnesium
Options
1 tsp minced garlic or 2 garlic cloves. My body doesn’t do well on raw garlic so I ddin’t include it. However, if your a raw garlic fan then add it in!
Thinner dressing: If you want to make it a little thinner then you could add a couple of tablespoons of water or a little more oil perhaps.
Thicker dressing: If you want to make it a little thicker you can add more avocado. What we had was a perfect consistency for us and we only used 1/2 an avocado as per the recipe above.
Directions
Put everything into a blender or Thermomix leaving the 1/4 cup olive oil to the side. Blend everything together and slowly begin to add the oil. Note: you don’t have to use all the oil. Taste as you go along.
Enjoy popping this on everything!
